Welcome to Orange County Recipes

We have started compiling some great recipes for Orange County. Some of them from our very own chefs here in Orange County and others sent to us from residents in OC. 

To kick off our recipe section, we are honoring the Orange in Orange County. We have listed some amazing Orange themed recipes for all to enjoy.


Orange Muffins
Orange Muffins 
 
Ingredients:
10 oz of mandarin oranges, drained
1 medium egg, slightly beaten
1 ½ cup of flour
½ cup of sugar
½ cup of butter
¼ cup of milk
1 ¾ teaspoon of baking powder
½ teaspoon of salt
¼ teaspoon of allspice
¼ teaspoon of nutmeg

Directions:
Preheat your oven to 350°F (175°C).
Sift flour with all of the other dry ingredients.  Add in the butter, Mix together the beaten egg and the milk, then add to dry ingredients and mix until moistened.

Fold in the mandarin orange pieces. Fill g reased muffin tins about three-quarters full. Bake for 25 minutes.Serve as desired


Orange Juice Dressing

Ingredients:
¼ cup of orange juice.
2 teaspoons of red wine vinegar.
1 tablespoon of vegetable oil.
2 teaspoons of honey.

Instructions for Orange Juice Dressing:
Mix all of the ingredients together.
Use as a dressing for fruit and vegetable salad.



Orange Chicken
Asian Orange Chicken

Ingredients:

Sauce:
1 1/2 cups water
2 1/2 tablespoons orange juice
1/4 cup lemon juice
1/3 cup rice vinegar
2 1/2 tablespoons soy sauce
1 tablespoon grated orange zest
1 cup packed brown sugar
1/2 teaspoon minced fresh ginger root 
3/4 teaspoon minced garlic
2 1/2 tablespoons chopped green onion
1/4 teaspoon red pepper flakes
 
3 tablespoons cornstarch
2 tablespoons water
 
Chicken:
2 boneless, skinless chicken breasts, cut into 1/2 inch pieces
1 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil


Directions:
Pour 1 1/2 cups water, orange juice, lemon juice, rice vinegar, and soy sauce into sauce pan; and set over medium-high heat. Stir in orange zest, brown sugar, ginger, garlic, and chopped onion. Bring to a boil. Remove from heat, and let cool 10 to 15 minutes.

Place chicken pieces into a resealable plastic bag. When contents of saucepan have cooled, pour 1 cup of sauce into bag. Reserve remaining sauce. Seal bag, and refrigerate at least 2 hours.

In another resealable plastic bag, mix the flour, salt, and pepper. Add marinated chicken pieces, and shake to coat.
Heat the oil in a large skillet over medium heat. Place chicken in skillet, and brown on both sides.

Remove and place on paper towels cover with aluminum foil.
Wipe out the skillet, and add the sauce. Bring to a boil over medium-high heat. Mix together cornstarch and 2 tablespoons water, and stir into sauce. Reduce heat to medium low; stir in chicken pieces, and simmer, about 5 minutes, stirring occasionally
.


Orange Julius
Orange Julius 
 
 
Ingredients:
 1 (6 oz.) can frozen orange juice concentrate
 1 c. milk
 1 c. water
 1/4 to 1/2 c. sugar (depending on your taste)
 1 tsp. vanilla
 6 ice cubes (enough to reach5-c. mark on blender)
 
 
Directions:
Place in blender.  Blend until finely crushed.  Serve immediately.  Best if served in a frozen glass.






Orange Cake

Ingredients:
1 (18.25 ounce) package yellow cake mix
1 (3 ounce) package instant lemon pudding mix
3/4 cup orange juice
1/2 cup vegetable oil
4 eggs (whole)
1 teaspoon lemon extract
1/3 cup orange juice
2/3 cup white sugar
1/4 cup butter

Directions:
Grease a 10 inch Bundt pan.
Preheat oven to 325 degrees F.
In a large bowl, stir
together cake mix and pudding mix.  Pour in 3/4 cup orange juice, oil, eggs and lemon extract. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Pour batter into prepared pan.
Bake for 50 to 60 minutes in preheated oven. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

In a saucepan over medium heat, cook 1/3 cup orange juice, sugar and butter for two minutes. Drizzle over cake.
